Prep time: 15 minutes Total time: 30 minutes Serves: 2 people


For the salad:

  • 1 carrot
  • 1 cup cooked quinoa
  • ½ cup red kidney beans
  • bunch of green lettuce
  • 1 cup cooked  sprouts
  • 1 cup cooked broccoli
  • 1 red pepper
  • ½ cup grated zucchini
  • 1 yellow pepper
  • some seeds, nuts and dried fruit (optional)

For the dressing:

  • ½ tsp shiitake dressing

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • ½ tsp garlic powder

  • pinch of salt and pepper


For the dressing:

  1. Mix all the ingredients for the dressing in a small bowl and set aside.

For the salad:

  1. Chop your vegetables however you like. I grated the carrots into nice strips and chopped red and yellow pepper.

  2. Then mix all the ingredients in a big bowl.

  3. Pour the dressing over the salad and mix well.

  4. Sprinkle some nuts, seeds and dried fruit on top if you’d like.

This recipe is so light and yummy and perfect to take with you for lunch as well.
